We know that Reedy Fork Organic beef is delicious because we’ve had lots of compliments in the form of thank you notes and just plain mmm mmm goods.
Last week we shared an organic beef recipe on our Facebook page from the new Mrs. Ben Miller (Aeriel). In case you missed it, here it is again…
5 whole organic peppers (green, yellow, orange, and/or red)
1 pound Reedy Fork Farm Organic ground beef
3 cloves of fresh minced organic garlic
1/4 red organic onion
2/3 large organic tomato
2 tsp. fresh ground pepper
1/2 tsp. sea salt
1 tbsp. lemon juice OR fresh juice from one lemon
6 tbsp. Worcestershire sauce
1/4 cup ketchup
1 1/2 tbsp. Texas Pete hot sauce
Preheat oven to 350 degrees.
Slice top off each pepper; remove core and seeds. Wash. Set aside.
Finely chop peeled red onion; dump into medium-size bowl.
Chop tomato; mix with onions.
Put ground beef into separate mixing bowl.
Add onion, tomato, garlic, lemon juice, 4 tbsp. Worcestershire sauce, ground pepper and sea salt. Mix together.
Spoon beef mixture into peppers until each is full.
Mix ketchup, 2 tbsp. Worcestershire sauce and Texas Pete in small bowl.
Spread ketchup mixture over the top (beef filling) of each pepper.
Place peppers in glass baking dish, securely sitting upright.
Bake on 350 degrees for 1 hour.
