Next week is Valentine’s Day, and nothing says “I Love You!” more than cooking for your one true love. For a breakfast in bed or a candlelight dinner of delicious steaks, our organic eggs and steak are better than Cupid!
1 1/2 – 2 pounds Reedy Fork Farm organic sirloin steak, cut to no more than 3″ thick
1 – 2 tablespoons Grape seed oil
1 cup sliced mushrooms
1 diced shallot
3/4 cup organic beef broth
Sprinkle salt and pepper and seasoning salt on both sides of steak. Let steak sit for about 30 minutes so that it comes to room temperature. Put grape seed. Place oil into a cast iron skillet and heat to medium high heat. Place steak in the pan. Cook for 3 minutes without moving it. Use tongs to flip it over and cook for another 3 minutes. This will give you a steak that is rare to medium rare. If you want it more done, place in an 325 oven.
Place on a plate and let rest while you cook the mushrooms and shallots.
In a skillet, cook the mushrooms and shallots in the olive oil and cook for 5 minutes on medium heat. Add beef broth and simmer for two minutes. Remove it from the heat, and spoon over the steak. Serve immediately.
